Horchata: joy, delight and packed with flavour
Before the soy milk hype, in Valencia we already had the horchata

Never heard of tiger nut milk, or horchata in Spanish? This traditional drink from the region of Valencia was popular long before the recent trend of plant milks. This fresh, vegan drink (that's right, vegan) has been a staple of our diet since time immemorial. And despite its long tradition, tiger nut milk is more current than ever, because now you can prepare and drink it sustainably, whether at home or on the go.
Vachata Horchata is a testament to this. It is a specialist “horchatería” at the heart of the Ruzafa district of Valencia that prepares this classic drink with a modern touch. Marta, the founder of Vachata, inherited her passion for the business from her family. “Ever since I was little, I have worked side by side with my family in the industry, going to trade shows, producers, retailers... to provide solutions to customers for them to enjoy the best tiger nut milk thanks to the pressing power of our machines”. And this is how Vachata came about, in the middle of the pandemic. “The name Vachata came about to stoke up a little joy during the lockdown, providing the city with a modern touch within the world of horchata. “Va” of Valencia and “chata” of horchata”.

Horchata
- Ingredients:
- 200 g tiger nuts (chufa)
- (se recomienda utilizar chufa molida)*
- 100 g sugar
- 1.2 L water
- Method:
- 1. Place the ground or soaked chufa in the Vegan Milk Maker glass.
- 2. Add the sugar and close the lid properly.
- 3. Programme "Almond Milk" mode and an amount of 1.2 L.
- After approximately 15’, the horchata will be ready.
(*) If using soaked chufa, it should be left to soak for 8 hours before starting to prepare your horchata. That’s why we recommend ground chufa, as the preparation time is lower and the result is just as delicious.
