A cocktail that will transform every evening, this wonderful winter pear cocktail is a must for your table this season.
Ingredients
- 50 ml gin
- 25 ml lemon
- 25 ml pear syrup
- 1 egg white
- SPICED PEAR SYRUP
- 4 pears (cored and diced)
- 1 star anise (plus more for serving)
- 1 cinnamon stick (halved)
- 250 g caster sugar
Instructions
- For the spiced pear syrup, put the ingredients in a saucepan with 250 ml water and simmer for 20-30 minutes until the flavours have combined. Leave to cool.
- For the cocktail, add all ingredients without ice to a cocktail shaker and shake vigorously. Open the shaker, fill with ice and shake again, then strain into a chilled coupe. To serve, place a star anise on the foam.
