When it’s gets really hot we usually feel like eating lighter dishes that help us digest our food better. These summer vegetables are very versatile and can be served as a side dish to cream soups, as well as a salad or in combination with other dishes.

Ingredients
- 1 aubergine
- 1 broccoli
- 2-3 carrots
- 1 yellow pepper
- 1 red pepper
- 1 courgette
- EVOO
- Spices to taste
- Salt Pepper
Instructions
- In a bowl, place all the vegetables diced any way you prefer.
- Mix the EVOO in a smaller bowl with the salt, pepper and your favourite spices.
- Mix well so that all the vegetables are well seasoned.
- Pour into the fryer basket and programme 180º for 15 minutes. It can be served hot as a warm salad accompanied by hummus, tomato salad and basil leaves or it can be enjoyed cold, any way you like.
