Eating salad when it starts to get cooler is not crazy if we know how to make a delicious salad with seasonal ingredients. Autumn is synonymous with pumpkin and we couldn’t miss the opportunity to prepare this warm salad with pumpkin, cranberries and burrata, a delight!

Ingredients
- 200 g pumpkin
- 400 g Spinach
- 1 handful of dehydrated blueberries
- 1 Burrata
- 60 ml EVOO
- 1 tablespoon of honey
- Some Basil leaves
- Pinch of salt
Instructions
- Heat the olive oil in a frying pan and fry the basil leaves. When they start to take on a deep colour, add the pumpkin, a pinch of salt and stir.
- Chop the fresh spinach into small pieces or, if using already chopped spinach, place it in a bowl.
- Add a drizzle of oil and a pinch of salt and massage.
- Place in a bowl and add the warm pumpkin and dried cranberries.
- To finish you can add a burrata and a vinaigrette of honey, olive oil and salt.
Notes
You can also prepare the pumpkin in our Fryer Air, cut into small pieces and cook for 15 minutes at 200 degrees, so easy.
