Salt pork loin is an easy dish that will become a staple in your recipe book. It’s perfect as a main course at a Christmas celebration or dinner when accompanied by a delicious sauce like this red plum sauce. The red plum sauce with sweet wine gives just the right contrast to this juicy pork tenderloin. Although you can also serve it with mustard sauce, cheese sauce or mushroom sauce. Serve with buttered sautéed potatoes and aromatics.

Ingredients
For the loin
- 1 piece of 15 kg of pork loin
- 2 kg coarse salt
- 1 teaspoon of fresh rosemary or thyme
- 2 bay leaves
- ½ teaspoon black pepper
- 1 litre water
For the red plum sauce
- 8 red plums
- 2 red onions
- 200 ml sweet wine
Instructions
For the salted tenderloin
- Put the water in the glass of the Chefbot and place the shallow steam basket on top of the glass. Cover the bottom with half of the flavoured salt. Place the tied pork loin and cover with the rest of the salt. Cook for 35 minutes with the steam function on. Carefully open the lid, break the salt crust and remove the loin. Set aside.
For the red plum sauce
- Place the blade accessory in the glass and add the chopped red onion. Program 1 minute on speed 6.
- Open the Chefbot and use the spatula to push down anything that may have stuck to the walls. Remove the blade accessory and attach the stir paddle accessory. Add the chopped plums, cleaned and pitted, and the 200 ml of sweet wine. Cook for 20 minutes at 100ºC and speed 2.
- Open the Chefbot and check if the sauce is consistent. If it is still too runny, program a further 15-minute cycle at 100ºC and speed 2.
- Serve the salt pork loin with the red plum sauce and some potatoes sautéed with butter and rosemary as a garnish.
