Cooking a simple and easy side dish in your air fryer is much easier than you think. Just add any vegetables you want to the basket. This recipe uses potatoes, peppers and onion, but you can use literally any kind of vegetables.

- 1 kg potatoes
- 1 red onion
- 2 red peppers
- Salt
- Pepper
- Thyme
Instructions
- Peel the onions and cut them and the peppers into julienne strips.
- Add the onion, peppers and potato to the fryer basket along with a dash of EVOO, salt, pepper and thyme.
- Shake the basket well so all the vegetables are well coated and close the fryer.
- Programme at 200°C for 20 minutes and open the basket halfway through the cycle to shake well so that the vegetables cook evenly.
- And voilá!
