This time of the year is undoubtedly the time when we make the most biscuits with the little ones. This is great fun as the children sit around the table exploring their creativity making different shapes of biscuits.

Ingredients for the biscuits
- 200 g Butter
- 180 g icing sugar
- 3 u Egg yolks
- 1 u Egg
- 1/2 tsp Salt
- 1 tsp Baking powder
- 2 tsp Vanilla sugar
- 400-450 g Flour
For the Filling
- Raspberry jam
Instructions
- Ingredients must be at room temperature
- Sieve the flour and baking powder and mix well.
- In the bowl of the Downmix mix the butter, icing sugar, salt and vanilla sugar and beat with the dough hook on speed 3 until the dough is fluffy and lighter.
- Add the egg and egg yolks, one by one, and beat until well blended, add almost all the flour and mix well.
- Dust the table with flour and spread the dough on it. Knead until it does not stick to your hands.
- Wrap in cling film and chill for 30 minutes in the fridge.
- Preheat the oven to 190ºC.
- Divide the dough into 3-4 parts. Leave the parts not used for the moment in the fridge.
- Sprinkle the table with a little flour and roll out the dough with a rolling pin until it is 4 mm thick.
- Cut out the double biscuits, the top biscuits with the hole.
- Place the biscuits on a tray prepared with baking paper.
- Bake for 5-7 minutes, until lightly browned.
- Leave to cool on a wire rack.
- Place some jam on the biscuit without a hole.
- Sprinkle the biscuits with holes with icing sugar and then place them on top of the biscuit with jam.
