Cooking a quiche in the air fryer is possible and much more straightforward than you might think. This version doesn’t use cream either, so you can make a dairy-free version if you want.

- 1 sheet of shortcrust pastry
- 3 eggs
- 1/2 onion
- 1 clove of garlic
- 1 tablespoon of EVOO
- 250 g spinach
- 100 g cheese
- Salt
- Pepper
- Nutmeg
- Low fryer mould
Instructions
- Preheat the air fryer to 200°C while you prepare the filling.
- Chop the half onion and clove of garlic and add them to a frying pan with the tablespoon of EVOO. Add a little salt and pepper and sauté for a few minutes over medium heat.
- Add the spinach and cook for 5 minutes (if using fresh spinach, cover the pan with a lid to allow the spinach to shrink a little). Turn off the heat and set aside.
- Place the shortcrust pastry in the low fryer mould with baking paper and fit it tightly to the edge, prick the bottom with a fork several times and cook it in the fryer for about 5 minutes at 200°C before adding the filling.
- In a bowl, beat the 3 eggs with a pinch of nutmeg, salt and half of the grated cheese and mix well.
- Add the sautéd vegetables to the egg mixture, mix well and pour into the mould with the pastry. Spread out the filling and top with the rest of the cheese.
- Place the mould in the fryer and cook for 30 minutes at 180°C until the dough looks browned. If you see that it’s browning too much, you can always cover it with aluminium foil and finish cooking.
- And voilá!
