  • 2 tablespoons of olive oil.
  • Salt and pepper to taste.

For the potatoes:

  • 500 g 1 lb of small potatoes (or medium ones cut into chunks).
  • 1/2 teaspoon of garlic powder.
  • 2 tablespoons of olive oil.
  • Salt and pepper to taste.

For the red wine sauce:

  • 1 cup 240 ml of dry red wine.
  • 1 cup 240 ml of beef or chicken stock.
  • 1 tablespoon of butter.
  • 1 tablespoon of flour (optional, for thickening.)
  • 1 tablespoon of sugar or honey (optional, for a milder taste.)
  • Salt and pepper to taste.

Instructions

Prepare the pork loin:

  • In a bowl, mix the minced garlic, mustard, rosemary, thyme, olive oil, salt, and pepper.
  • Rub this mixture over the pork loin, massaging it well, and let it marinate for at least 30 minutes (optional).
  • Preheat the air fryer to 200 °C (400 °F) for 5 minutes.

Cook the pork loin:

  • Place the pork loin in the air fryer basket.
  • Cook at 200 °C (400 °F) for 20-25 minutes, flipping halfway through for even browning.
  • Check the internal temperature with a kitchen thermometer; it should reach at least 63 °C (145 °F).
  • Remove the pork loin and let it rest for 10 minutes before slicing.

Prepare the potatoes:

  • Wash the potatoes and cut them into chunks if they’re medium-sized.
  • Toss the potatoes with olive oil, garlic powder, salt, and pepper.
  • Place the potatoes in the air fryer basket, ensuring they don’t overlap.
  • Cook at 200 °C (400 °F) for 20 minutes, shaking the basket halfway through for even browning.

Prepare the red wine sauce:

  • In a skillet over medium heat, pour the red wine and let it reduce by half (about 5-7 minutes).
  • Add the stock and cook for another 5 minutes.
  • If you want to thicken the sauce, mix the butter with the flour and add it to the skillet, stirring until it reaches the desired consistency.
  • Adjust the taste with salt, pepper, and a touch of sugar or honey if you prefer a milder flavor.

Assemble the dish:

  • Slice the pork loin and place it on a plate.
  • Serve with the potatoes and pour the warm red wine sauce over the pork.
  • Garnish with a sprig of fresh rosemary or thyme.
