Ingredients
- 3 ounces gin
- 1/2 ounce persimmon simple syrup
- 1 egg white
- ½ teaspoon lemon juice
- ice (for shaking)
For the persimmon syrup
- persimmon and star anise (to finish)
- Persimmon simple syrup
- 1 cup sugar
- 1 cup water
- 1 persimmon (sliced)
Instructions
For the syrup
- Boil all ingredients for 4-5 minutes.
- Remove to cool and strain completely.
For the cocktail
- Combine the gin, simple syrup, egg white and lemon juice in a cocktail shaker.
- Shake for 30 seconds.
- Add ice to half the shaker and shake vigorously for another minute.
- Pour into a glass with star anise and sliced persimmon.
