PEAS AND CURRY CREAM

This is a delicious and exotic pea cream ideal for taking advantage of seasonal peas and including more legumes in our diet. If the peas are not in season, you can use them directly frozen – they will be delicious too! It’s also a cream that can be served hot in winter and cold in summer – it’s always great!

Ingredients

  • 1 large onion
  • 3 tablespoons of extra virgin olive oil
  • 250 ml mineral water
  • 100 g small potatoes
  • 1 teaspoon curry powder
  • 260 g peas without pods
  • 185 ml almond milk
  • 1 tablespoon of nutritional yeast
  • Salt to taste

Instructions

  • Place the blade accessory and insert the washed and quartered onion. Program 10 seconds at speed 6.
  • Lower any leftovers that may have stuck to the walls of the Chefbot with the help of the spatula.
  • Insert the peeled and diced potato. Add the water, salt, peas and curry. Cover and program 20 minutes at 100ºC speed 1.
  • Lift the lid carefully and wait about 5 minutes for the contents to cool. Meanwhile, add the milk and the yeast. Replace the lid and programme 30 seconds without temperature at speed 12.
  • Open the lid, add salt and curry to taste and grind again 30 seconds without temperature at speed 12.
  • Serve hot with fresh coriander, fresh peas and/or croutons. (In summer it can also be served cold).
