This papaya, lime, and chili sorbet is a refreshing explosion of exotic flavors: the sweetness of papaya, the vibrant tartness of lime, and the spicy kick of chili combine to create a unique and surprising dessert. Ingredients
- 50 g superfine sugar
- 50 g maple syrup
- 1 tablespoon water
- 300 g papaya (peeled and ripe, seeded and cut into 1–2 cm pieces)
- Zest and juice of 2 limes
- 1/2 teaspoon dried chili flakes
- A pinch of sea salt
Instructions
- Pour the sugar and syrup into the Chefbot container set at 60°C and run for 20 minutes with the chopping attachment.
- Open the Chefbot to check that the sugar has dissolved; if not, program for an additional 10 minutes.
- Open the Chefbot and add the diced papaya, lime zest and juice, chili, and a pinch of salt.
- Close the Chefbot lid and blend at maximum speed for about 30–40 seconds until a homogeneous mixture is obtained.
- Transfer the mixture into a freezer-safe container.
- After about 2–3 hours, remove the container from the freezer and stir well with a fork to promote even freezing.
- Pour the mixture into the bowl of a food processor and blend in intervals at speeds 2, 4, and 6 until well combined and a smooth cream forms.
- Transfer the mixture back into a freezer-safe container.
- When serving, it is important to take it out a little beforehand so that it is easier to form into balls.
- Garnish with a little lime zest and voilà!
