Ingredients

  • 50 g superfine sugar
  • 50 g maple syrup
  • 1 tablespoon water
  • 300 g papaya (peeled and ripe, seeded and cut into 1–2 cm pieces)
  • Zest and juice of 2 limes
  • 1/2 teaspoon dried chili flakes
  • A pinch of sea salt

Instructions

  • Pour the sugar and syrup into the Chefbot container set at 60°C and run for 20 minutes with the chopping attachment.
  • Open the Chefbot to check that the sugar has dissolved; if not, program for an additional 10 minutes.
  • Open the Chefbot and add the diced papaya, lime zest and juice, chili, and a pinch of salt.
  • Close the Chefbot lid and blend at maximum speed for about 30–40 seconds until a homogeneous mixture is obtained.
  • Transfer the mixture into a freezer-safe container.
  • After about 2–3 hours, remove the container from the freezer and stir well with a fork to promote even freezing.
  • Pour the mixture into the bowl of a food processor and blend in intervals at speeds 2, 4, and 6 until well combined and a smooth cream forms.
  • Transfer the mixture back into a freezer-safe container.
  • When serving, it is important to take it out a little beforehand so that it is easier to form into balls.
  • Garnish with a little lime zest and voilà!
