Focaccia is a traditional Italian dish consisting of a thick, spongy flat bread with spices, oil and salt. It falls somewhere between bread and pizza, but unlike pizza, focaccia isn’t usually served with tomato sauce.
This focaccia is a perfect side to any dish, or it can also be used to prepare sandwiches as Italians traditionally do.

Ingredients
- Water at room temperature 240ml
- Yeast 9g
- Flour 400g
- Salt 6g
- Brown sugar 6g
- Olive oil 13 ml
Instructions
- In a glass, mix the water with the yeast and allow it to activate for 10 minutes.
- After 10 minutes, open the Chefbot and insert the blade accessory, add the flour, the water and yeast mixture, salt, sugar and 11ml of olive oil.
- Close the Chefbot and knead for 2 minutes at speed 1.
- Spread 2 ml, which is equivalent to a tablespoon of olive oil, all over a medium-sized bowl and place the focaccia dough in the bowl. Cover it with a cloth and leave it in a warm place for at least an hour and a half to allow the dough to double in size.
- Once the dough has risen, preheat the oven to 170 ºC.
- On a baking tray, sprinkle a little flour, shape the focaccia into an oval shape and press the top with a rolling pin to flatten it.
- Using your fingers, press the dough to make holes and add the topping ingredients: the cherry tomatoes, the olives, a tablespoon of olive oil on the focaccia and sprinkle the rosemary, oregano and salt.
- Bake at 170 ºC for 35 minutes.
- Leave to cool and serve warm. It can be kept in the fridge and heated in the oven to serve.
