This fish broth is ideal to enrich and reinforce any type of dish such as stews or good rice, even to be eaten as a soup. It is also highly recommended to freeze the broth, so that a good dish with the best fish flavour can be prepared at any time.

- 500 g rock fish
- 1 l of water
- 100 g of carrots
- 100 g of onion
- 1 garlic
- 200 g of natural tomato
- Olive oil
- Laurel
- Pepper
- Salt
Instructions
- Clean the fish, remove the guts and pass it through water.
- Peel the carrot, onion and garlic.
- Chop the tomato and other vegetables into four pieces.
- Place the blade accessory in the Chefbot and insert the vegetables to prepare the sofrito. Set at speed 2 for 10 seconds.
- Add the oil, a pinch of salt and fry at 120ºC for 7 minutes, speed 1.
- Add the water to the sofrito along with the fish, laurel and pepper. Programme 10 minutes at 120ºC, speed 2.
- At the end of the time, prepare a soup tureen and strain the broth.
