In Spain, gazpacho is the key dish of the summer, we love it at any time, as it is the perfect way to refresh the palate in the hot days of July. However, we know that eating the same thing every day can get boring, so we propose the following Gazpacho recipe so that you have a different option to enjoy.

Ingredients
- 500 g peeled cucumber
- 1 tablespoon of basil leaves
- 1 tablespoon parsley leaves
- 1 tablespoon dill leaves
- 1 tablespoon mint leaves
- ½ Italian pepper
- 1 clove of garlic
- ½ spring onion
- 100 ml EVOO
- 2 tablespoons Greek yoghurt
- salt to taste
Instructions
- Place all the ingredients except the EVOO in the Chef Bot and blend for 4 minutes on speed 10.
- Start the chef bot on speed 3 with no time and add the oil in a thin trickle.
- Refrigerate in the fridge for at least 4 hours.
- served garnished with cucumber slices and accompanied by toasted bread.
