We all love a good chicken burger, especially if it’s a crispy Kentucky-style one. A real delicacy from the United States. Don’t worry, now you can make chicken as crispy as the ones you see on the internet without using oil.

Ingredients
- 1 chicken breast fillet or 1 chicken thigh
- 2 eggs
- 200 g panko or crunchy breading mix.
- Salt
- Pepper
Instructions
- Take the breast or thigh and pat dry with kitchen paper to remove excess water.
- Set up two bowls, one with beaten egg and the other with the panko or breading mix
- Add salt and pepper to the egg bowl and fully coat both sides of the chicken in the mix.
- Then, cover it in the panko or breading mix.
- And here’s the trick… cover it in the egg and breadcrumbs once again.
- Now you can put it in the basket of the fryer and programme it to 200°C for 20 minutes.
- Halfway through cooking you should turn the breast fillet or thing so that it browns evenly.
- Done! You can enjoy it on a nice brioche bun with ranch dressing on both halves, iceberg lettuce, tomato and good cheddar cheese.
- If you want, you can put the slice of cheese on the chicken when there’s 2 minutes’ cooking time left so that it’s well melted (Be careful, if you do this, place the chicken on a piece of baking paper at the start of cooking so that when you put the cheese in, it doesn’t not leak through the holes in the basket).
