The cod esqueixada is a typical and well known dish from the area of Catalonia (Spain). It is a salad with desalted and crumbled cod, accompanied by fresh and chopped vegetables.

Ingredients
- 400 g of desalted and crumbled cod
- 100 g green pepper
- 100 g red pepper
- 80 g onion
- 1 tomato
- 50 g of black olives
- 80 g extra virgin olive oil
- Vinegar
- Salt
- Pepper
Instructions
- Peel the onion and cut it into four pieces.
- Wash and clean the peppers and tomatoes and cut them into four pieces.
- Place the blade accessory in the Chefbot and insert the vegetables. Set manually for 10 seconds at speed 2.
- Replace the blade accessory with the stir paddle accessory and use the spatula to lower the vegetable pieces that are on the lid or on the walls.
- Add the cod, olives, oil, vinegar, salt and pepper and programme 1 minute at speed 1.
- Put the cod esqueixada in a bowl and leave it to rest in the fridge for an hour so that it is cold and the flavours are integrated.
