- 200 g of salt
- 1 grated lemon zest
- 1 grated orange zest
- 1 grated lime zest
- 4 salmon fillets

- Start by mixing the salt with the grated lemon, orange and lime zests. Make sure to properly rub the fruit zests with the salt when making this mix to ensure that the salt absorbs all the citric aromas and flavours. This will produce a much more aromatic dish.
- Rub the salt onto the skin side of the salmon fillets. It is very important to do this on the skin side because the salmon will be very salty otherwise.
- Place the salmon in your air fryer and choose the fish setting. (180 degrees for 15-20 minutes)
- Once it has cooked, remove the layer of solidified salt that will have formed on the salmon and serve with rice or your favourite vegetables.
