This recipe is also known as buffalo wings. It turned this part of the chicken from a secondary ingredient into a star dish.
If you like them spicy, you can sprinkle with hot paprika and, if you like citrus flavours, they’ll be delicious with a little lime or lemon.

- Chicken wings 1 kg
- Barbecue sauce 200 g
- Extra virgin olive oil 15 ml
- Ground pepper
- Garlic powder
- Onion powder
- Oregano
- Honey
- Corn flour 15 g
- Water 30 g
- Coriander
Instructions
- Mix the barbecue sauce, oil, ground pepper, garlic powder, onion powder and oregano in a bowl and mix with the wings.
- Cover with cling film and leave to rest in the fridge for about 3 hours or overnight.
- After this time, brush each wing with a little honey.
- Preheat the fryer to 200°C for 5 minutes
- Cook for 15–20 minutes at a temperature of 200°C, depending on the size of the wings. Open the basket at the halfway point and shake the wings well so that they brown evenly.
- Chop fresh coriander, sprinkle on top and add more salt if needed.
