All the flavour of the east can be enjoyed in this dish: spiced beef skewers accompanied by a yoghurt and cucumber sauce. Serve with a salad for a complete meal.

Ingredients
- 450 g of beef mince
- 4 sprigs of coriander
- ½ a n orange peel
- 15 leaves of mint
- ½ a green chilli
- 75 g of feta cheese
- 50 g of fresh onion
- ½ a teaspoon of cumin
- 1 teaspoon of salt
- Pepper to taste
For the sauce:
- 125 g of seedless cucumber
- 175 g of Greek yoghurt
- ½ a clove of garlic
- ½ a tablespoon of white wine vinegar
- Salt
- Pepper
Instructions
- Use the blades attachment. Add the cucumber to the workbowl and mix for 5 seconds at speed 5. Pour into the steaming basket, add a pinch of salt and leave to drain. Rinse and dry the workbowl and continue to use the blades attachment.
- Add the orange peel, coriander, 8 mint leaves and chilli to the workbowl. Mix for 10 seconds at speed 10. Push the ingredients to the bottom of the workbowl.
- Add the minced meat and mix for 15 seconds, reverse rotation at speed 3. Pour into a bowl and set aside.
- Without washing the workbowl, add 45g of yoghurt, the feta cheese, the fresh onion, the cumin, the teaspoon of salt and a pinch of pepper. Mix for 10 seconds at speed 5.
- Add the minced meat again and mix for 20 seconds, reverse rotation at speed 3. Remove the mix and divide into 10 balls of 70g. Leave to rest in the fridge for 30 minutes.
- Wash the workbowl and the blades, dry and get them ready to use again.
- Add the garlic and remaining mint leaves to the workbowl. Mix for 5 seconds at speed 8. Push the mix down off the sides.
- Add the remaining yoghurt, the olive oil, vinegar, a pinch of salt and a pinch of pepper. Mix for 10 seconds at speed 3. Add the cucumber and mix with the spatula. Pour into a bowl.
- Form a cylinder with each ball of meat and skewer onto a wooden skewer. Grill them with a little oil and serve with the sauce.
