This almond and lime sponge cake is an easy and delicious recipe that you can prepare in your air fryer. A gluten-free sponge cake that suits all tastes.

Ingredients
- 4 eggs
- 2 lemons
- 150 g sugar
- 240 g almond flour
- 200 g ricotta cheese
- 30 ml olive oil
- Icing sugar
- Lemons and limes for decoration.
Instructions
- Preheat the fryer to 180°C.
- Pour the eggs into a bowl and beat them until they become whiter. Add the sugar and beat again until well blended.
- Add the almond flour, zest of the two lemons, ricotta and oil. Whisk well until all the ingredients are fully combined.
- Pour the mix into the air fryer’s low mould and bake for 30 minutes at 180°C. Leave to cool, turn out of the mould and sprinkle with icing sugar. Decorate with some lemons and lime and enjoy.
