Croquettes are one of the most typical dishes in Spanish cuisine. This traditional recipe reminds us of the taste of home and home cooking. The most famous ones? Those made with ham. We’ll show you how to make them in the air fryer today, for a lighter version.

Ingredients
- 170 g wholemeal flour
- 150 g Serrano ham
- 450 ml whole milk
- 90 ml extra virgin olive oil
- Pepper to taste
- Salt to taste
- Nutmeg to taste
Instructions
For the béchamel sauce
- Heat a saucepan over medium heat and add the extra virgin olive oil.
- When the oil’s hot, add the wholemeal flour and stir it into the oil. Gradually add the milk to the mixture. Stir vigorously until you achieve the consistency of a béchamel sauce.
- Add sea salt, ground black pepper and nutmeg to the mixture to taste.
- Continue stirring until you achieve this consistency.
- Store the mixture.
For the filling
- Chop all the leftover stew in a food processor on high power or in a blender.
- Mix the leftover stew with the béchamel sauce.
- Place the mixture in a dish and let it cool to room temperature.
- Put this dish in the fridge covered with plastic film clinging to the dough.
- Leave to rest for 8 hours.
- After that, shape the dough so that it doesn’t exceed 2 cm in width.
- Dip the croquettes in egg and then in breadcrumbs.
- Place on a tray.
- Place the tray of battered croquettes in the fridge for 1 hour to allow the batter to set.
- After that, put the croquettes in the air fryer, leaving space between them and spraying a little extra virgin olive oil on top.
- Close the Fryer.
- Programme at 200º for 15 min.
